Café de Paris is the herb butter on entrecôte in the best Paris bistros. Until 2018 you could only taste it in a restaurant. That year we became the first to put the real sauce in a jar, starting with one Instagram page and a kitchen full of jars.
How it started
A friend asked me for my entrecôte sauce recipe. I asked her: “Do you want to sell it, or eat it?” She said, “To eat.” So I made it for her instead.
She served it at a dinner for her guests. She was amazed by the taste, and her guests were just as surprised. Then she posted the dinner on Instagram, where she is very active and followed by thousands of people. The next morning I had hundreds of new followers, and my messages were full of people asking where they could buy the sauce.
My son said, “Make it and sell it.” I said no. Then my wife went to the market and came back with 24 empty jars. My sister called and took me to the supermarket “to buy something”, and there she asked me what I needed for the sauce. It was a family conspiracy, and it worked.
I made the first 24 jars, designed a label with an app I found online, and had it printed at the little print shop next door. I posted them on Instagram, and all 24 were gone in ten minutes.
